- In a heavy bottomed non stick saucepan, dissolve the brown sugar and water.
- As the syrup thicken add the butter and mix well until thick.
- Take off heat and add the caramel sauce in a greased cake tin.
- Add the chopped jackfruit pieces by evenly layering them over the caramel sauce.

- Combine all the dry ingredients, except butter in a bowl and mix.
- In another bowl, beat the eggs well.
- Add the vanilla and milk. whisk well until well combined.

- Bake in a pre heated oven for 30-40 minutes on until done at 190 degree celcius.
